One of the major factors that influenced the character of New York City was the massive influx of immigrants who arrived via Ellis Island and other ports of entry. While some people entered the country and just kept going, spreading across the country, large numbers stayed in the City and contributed their labor and talents to turn an already strong economy into the powerhouse it is today. Many immigrants did assimilate over time, but the assimilation went both ways. Newcomers adopted American ways and – at the same time – shared their cultural history and helped shape what it meant to be an American. The idea of America as melting pot of ideas and culture has always rung true. Back in the day, French, Irish, Italian, Puerto Rican, Spanish, and East Asian cultures, to name a few, had a significant impact on the cultural life in the city, and the country as a whole. It continues to this day. In The Big Apple and in other large cities, immigrants typically congregated in their own neighborhoods, like Chinatown or Little Italy. This helped families hold on to some ways of the old country while adjusting to an American way of life. It was this combination of old and new that led to the eclectic and ever-changing mix that is American culture.

Restaurants and food trends are a great way to gauge this combination and its impact. Often established by immigrants to mainly serve their own people, many local ethnic eateries blossomed over time and helped introduce their unique, cultural specialties to the general public. Many foreign dishes became part of the fabric of American life to the extent that many people forget that foods like hamburgers, pizza, and fried rice were once considered exotic and a bizarre. Due to its large immigrant population, Manhattan may have the most varied collection of restaurants in the world. The Kopitiam, a Malaysian-themed coffee shop and café is located on East Broadway.
